I’m so excited to be doing something different for today’s post, and thrilled to be able to focus on and promote an amazing Lady and friend!
I first want to take you back 12 years ago, when I was engaged to be married, living in St. George with my parents and siblings. I was able to have a thought and act on it at the drop of a hat. Don’t ask me how I found this place, but I did. On some of our days off, I would grab my sister bright and early, jump in the car, and travel half an hour to downtown Hamilton. Our mouths would be watering, and our minds would be thinking about what we would get. This was so exciting to us. We would park our car on Duke st. and walk over to what I thought was one of the most incredible places ever! …… Marci’s Muffins! This little bakery literally made my heart sing!. We would enjoy some of the most delicious baked goods we had ever tasted. I would of course buy extra, so I could take them home and freeze them for the week until our next expedition.
This went on for a couple of years. Little did I know that this amazing and lovely lady would become one of my dearest friends and sisters in Christ. I later married my husband, moved to Hamilton and became a part of my awesome church on West mountain. One day I turned around and there stood Marci Prebianca in my church foyer!! My heart fluttered… she was like a movie star to me, and now I stood before her. 11 years later, she is one of my dear friends!
I now have the privilege of serving with her at church as she bakes for our huge cafe. I also have this opportunity to .promote her incredible growing business …. Marci’s Bakery!

I know that Marci’s heart desire is to bake healthy with life giving ingredients that taste outstanding! I wanted to share one of my favourite cookies that Marci makes (with her permission of course!) for you to try at home. And….. her baking mixes are available at all 5 Goodness Me stores, Bennett’s Apples and Cider, The Little Gourmet, and many more.
Hazelnut Quinoa Cookies
1/3 Cup honey 1/3 cup succanat 1/2 Cup butter 1/2 Cup Hazelnut butter 1/2 tsp pure vanilla 1 Cup Quinoa flour 3/4 Cup Quinoa flakes 1 tsp Baking Soda 1/2 Cup Hazelnuts (chopped)
Preheat oven to 325 Mix all the wet ingredients together. Combine all the dry ingredients together and then add the wet to the dry until well blended. Drop by spoonful onto cookie sheet (pat down a little bit) and bake for 9-10 mins. Watch them, they are high protein and can burn easily. These are totally delicious and filling for a great snack!
