It’s definitely a classic!
The Meatloaf.
For years, families have thrown together meat, and a few other ingredients to make a protein filled comfort food for their hungry crew. In fact, the ‘meatloaf’ was first created back in the late 1900’s, that’s over 100 years ago. And it’s still alive and delicious today!
Now, for those of you who know me…… know that I don’t eat a whole lot of meat (wink, wink) But, the rest of my family does!. So I have to be intentional about meeting their cravings as well.
This doesn’t take a lot of time to prepare, and I usually get the kids to help me!
You can be creative, and mix it up, but this is what I do:
- 1 tube of lean ground beef (I’ve also used ground chicken before)
- 1 Tbsp of Epicure meatloaf seasoning (can also use Montreal steak spice)
- 3/4 Cup crushed crackers, cornflakes or breadcrumbs (whatever is in your house)
- Good amount of salt and pepper (add to your liking!)
- 1/2 can of tomato soup
- 2 eggs
Mix all together until well combined. Pour into a greased loaf pan. Make a well in the center of the loaf and pour some more tomato soup on top, as well as a sprinkle of salt. Place in a pre-heated oven for about 45 mins.
I usually serve this with mashed potatoes and green beans, or any other colorful vegetables.
The family loves it, and it’s great for left overs the next day.
