I wanted to share an amazing snack/treat/dessert with you all this week!
Call it what you want……. to me, it’s a pop of healthy, yummy goodness.
I got this idea from a great book we’re reading, called ‘Discover The Power Of Food’. It’s a GREAT book to go through if you are looking to change a few things in your health and diet.
Right now my husband is on a HUGE health kick! I’ve never seen him make these kind of wonderful changes before. And It’s working, because he’s lost 8 lbs so far!! Usually, my husband would easily grab a big bag of chips, or multiple cookies and milk to snack on at night. Then I tried this recipe, and it has been such a great alternative full of protein, healthy fats, and deliciousness.
A must try this week! Wheat Free, Gluten Free, Dairy Free and Vegan
Power Poppers ……
- 1/2 Cup pumpkin seeds
- 1/4 Cup walnuts
- 1/2 Cup hemp hearts
- 1/4 gr. flax seed
- 1/2 Cup shredded unsweetened coconut, divided
- 2 Tbsp cocoa powder
- 1/2 Cup almond butter
- 1/2 Cup coconut oil softened
- 1/3 – 1/2 Cup organic honey
Place all seeds, walnuts, cocoa pwd in food processor or magic bullet. Process for 20 – 30 seconds. Transfer to a bowl and add in the almond butter, coconut oil, and honey.Mix until well blended. Form into 1 inch balls and roll in remaining coconut if desired (sometimes I skip this step) and put in refrigerator for at least 1 hr before serving.
Did I mention that I am loving adding HEMP SEEDS to almost everything I make!
It’s easy to fuel your body with healthy snacks – pair these up with some bright fruit and veggies, and there you have it. They are so easy to just ‘pop’ right in your mouth!
