All About The Pumpkin!

It’s not just the beautiful autumn weather that gets me all excited about pumpkin. All year round, I crave the wonderful taste of the seasonal fruit (yes,…. it is a fruit!).

Because pumpkins are quite popular right now, I thought I’d share some delicious recipes with it.

Because…….. I’m all about the pumpkin!

The first recipe is a fun one. Normally every Sunday at our house, I make a warm apple crisp. It’s comforting, delicious, and a pleasure to share with family.

During the autumn season, I switch to pumpkin. This recipe is Pumpkin Cobbler Crunch:

1)  1 can of pumpkin pie filling

2)  1 egg

3) 1/4 Cup evaporated milk

4) a dash of pumpkin pie seasoning

Place all the ingredients in a mixing bowl,and whisk until combined. Place in a round ceramic dish.

Crumble all of the next ingredients together:

1)  1 Cup flour (use any combination of flour mixture you wish)

2)  1/2 Cup melted butter

3) 1/3 Cup oats or muesli

4)  1/2 brown sugar

After combined, sprinkle over pumpkin mixture. Bake at 350′ for about 45 minutes.  Let cool, and then dish out and top with a spoonful of whip cream or ice cream.

Next, is a recipe that I LOVE having in the morning. A Pumpkin Smoothie!  Sometimes I add some protein powder to this to get me through the morning.

1)  1/2 Cup Pumpkin puree

2)  1/2 a Banana

3)  1/4 Cup Vanilla Greek Yogurt

4)  A Dash Pumpkin Pie Spice

5)  1 Tbsp Flaxseed

6)  1/2 scoop of Vanilla Protein Powder

Mix all ingredients together. If needed, add a bit of honey and almond milk to sweeten and thin out if desired. It’s filling and yummy!

And of course, there is the classic pumpkin pie, pumpkin muffins, pumpkin waffles, cookies and bread!  A delicious accompaniment to many recipes.

Give it a try, you never know, pumpkin might just be your new favourite ingredient.
